Recipe: Pumpkin Chili

Hello friends! I’m coming at y’all with another recipe tonight- this one is fall inspired and SO GOOD! (I’ve had it three times since I made it if that says anything at all). There’s been a slight cold front come through Texas recently, and when its cold out I love cooking the “cozy” type foods! I always think of soups, chilis, and crockpot meals. Stefan has a super delicious chili recipe (I’ll have to share that sometime!), so he usually makes the chili. However, I wanted to switch it up a bit and try a pumpkin chili! This recipe is super easy and even more delicious, it’s definitely one that’s going to be saved in our house!

Recipe: Sweet Potato Gnocchi + Chicken Sausage

If you’ve been to Trader Joe’s during the fall season, you have witnessed the craze of the fall inspired items. One of my favorites is the sweet potato gnocchi! Throughout the entire year, Trader Joe’s offers the Cauliflower gnocchi – which is very good as well – but I wanted to share a recipe using the sweet potato gnocchi. Each of these sells out fast throughout the day, so if you see either of them, go ahead and snag them!

There are a few different ways you can cook the gnocchi, I prefer to cook it on the cast iron. If you don’t have/don’t want to use a cast iron, a skillet will work just fine! I have found that doing this gives you crispy, tasty edges on the gnocchi (instead of boiling it like the package says to do).

What I Eat in a Day

Hello hello! Y’all have been requesting a what I eat in a day video so here you go! Down below I’ve listen a few other ideas of what I eat in a day as well. Be sure to let me know your favorite breakfast, lunch, dinner, and snack ideas as I’m always looking to try new things!

Breakfast:

  • If I’m working out that day I’ll do the protein shake I mentioned in the video. Y’all HAVE to try this!! It tastes just like a chocolate milkshake. Other breakfast ideas I’ll do are chia seed pudding or a gluten free bagel with dairy free cream cheese!

Lunch:

  • This has been my lunch for 3 weeks strait now and I’m still not tired of it! It is soo good.

How I Plan Meals for the Week + Trader Joe’s Haul

Not going to lie, I love grocery shopping! I love finding different recipes for the week and going to the store for all the things! I’m linking my Trader Joe’s grocery haul above, but I’m going to talk some about how I make my list for the grocery store, as well as our meals for the week!

As I mentioned in the video, I’m one of those people who HAS to take a grocery list to the store with them. I’ve tried going without one or with a list on my phone, and it usually resulted in being in the store for forever and getting way more than I needed. This is the meal planner I used to use (and loved!) but I have misplaced it so I’m back to the old fashioned way of writing my lists on a piece of notebook paper – which honestly works just as well, just isn’t as cute lol!

When I start writing my list, I write out what we’re having for each meal throughout the week. Then while looking at those meals I write out each ingredient needed! This works best for me, but I know some people like to have their lists separated by each department (produce, meats, etc.), so it’s really personal preference!
