If you’ve been to Trader Joe’s during the fall season, you have witnessed the craze of the fall inspired items. One of my favorites is the sweet potato gnocchi! Throughout the entire year, Trader Joe’s offers the Cauliflower gnocchi – which is very good as well – but I wanted to share a recipe using the sweet potato gnocchi. Each of these sells out fast throughout the day, so if you see either of them, go ahead and snag them!
There are a few different ways you can cook the gnocchi, I prefer to cook it on the cast iron. If you don’t have/don’t want to use a cast iron, a skillet will work just fine! I have found that doing this gives you crispy, tasty edges on the gnocchi (instead of boiling it like the package says to do).
This recipe involves just a few ingredients and is very quick + easy to make! If you need something to whip up fast on a weeknight, this is a great option.
What you’ll need:
- 1 pack Trader Joe’s sweet potato gnocchi
- 1 pack of sausage – I used Trader Joe’s chicken sausage. I have tried all of the different flavors and they’re all good. For this dish I used the Sweet Italian Style
- 1 bunch asparagus
- Sauce of choice – I used Trader Joe’s vegan kale, cashew, and basil pesto. You could also use a marinara/tomato based sauce.
WHAT YOU’LL DO:
Preheat oven to 400. Chop asparagus + season to your liking! I seasoned with salt, pepper, + turmeric. Throw in oven until cooked through.
While asparagus is cooking, add gnocchi to cast iron/skillet with a little bit of HOT oil. Allow gnocchi to cook for a bit, stirring frequently.
Once gnocchi has cooked for a bit, add sliced (chicken) sausage. I like my chicken sausage a little crispy, so I allowed them to get that way before removing the cast iron from the heat!
Once the sausage + gnocchi are both cooked to your liking, remove cast iron from heat. Add cooked asparagus to cast iron and mix all together. Add sauce- enough to cover entire mixture. I topped with mozzarella cheese!
